Bluff City Tough

In the last two years alone, she’s jumped head-first into a new sport and discipline, married her boyfriend of four years, Blair, and started appearing in ads for international companies. In just the past few months she’s been sucked into a glitzy career arc very much approaching fame, complete with short notice red-eyed flights to Las Vegas and big-budget photo shoots for magazine covers. She is a perfect example of hard work, deep commitment and self-discipline.

Going the distance

bonneyleukemia.jpgAs a wife, mother, teacher and lifelong athlete, Cordova resident Bonney Haynes is no stranger to facing challenges. This past February, when the Lamplighter Montessori teacher was told that she may have a rare form of leukemia, she instantly thought of those closest to her.

“I immediately thought of my two sons,” Bonney recalls. “I lost my grandmother to breast cancer and my grandfather to skin cancer, so my perception of anything having to do with cancer or going to see an oncologist is death. It was very scary, but I knew I would get through it.”

Turkey Stew

Thanksgiving is over.  You’ve made a meal or two with all the usual leftovers, but that quickly gets boring and you still have turkey.  And while a sandwich might sound fine for lunch, it doesn’t seem like enough for a full meal.  Enter the turkey stew.  I call it a stew because of its rustic look, but with a quick-to-prepare recipe and lack of roux, it falls somewhere between soup and stew.  By using pre-cooked pulled turkey, the stew only takes about forty-five minutes to prepare from start to finish, and the use of okra serves as a natural, healthy thickener like it does in gumbo.

The holiday season can be a time when we leave healthy eating habits behind and fall into a world of high fat foods and sweets. This recipe can help keep you on track.  For a meal full of fall and holiday flavors, I enjoy this recipe after a nice salad with sun-dried cranberries, apples, walnuts and a pinch of blue cheese.  I hope you will too.
