- 10 dates + 1 cup warm water to soak
- 1/3 cup almond butter (can substitute peanut butter)
- 1/4 cup hazelnuts
- 1 Tbsp flax seeds
- 1/2 tsp pure vanilla extract
- 1/2 Tbsp ground cinnamon
- 1/8 tsp ground ginger
- 1/8 tsp nutmeg
- 1/8 tsp ground cloves
- 1/2 cup + 1 Tbsp dried blueberries
- 1 Tbsp coconut sugar (optional)
Remove pits from the dates and soak them in warm water for 3 minutes.
In a food processor, grind hazelnuts and flaxseed into a powder.
Remove dates from the water (reserve water for later) and add to the food processor with the hazelnut/flaxseed powder. Add in almond butter and 1/2 c dried blueberries.
Process for about 30 seconds until a well-blended paste forms. Add 1 tbsp of the left over date water and the vanilla, cinnamon, ginger, nutmeg, and cloves. Blend until all ingredients are fully incorporated.
Place mixture in a medium mixing bowl.
Roughly chop remaining 1 tbsp blueberries and then fold them into the paste.
Roll dough into 1 inch balls, should make roughly 12 bites.
(optional for dessert) roll bites in coconut sugar.
