Cranberry Spinach Salad with Citrus Poppy Seed Dressing

Serves 4

Dressing Ingredients

  • 1/4 cup olive oil
  • 1/4 cup canola oil
  • 2 tsp orange zest
  • 1/4 cup fresh orange juice
  • 2 Tbsp fresh lemon juice
  • 2 Tbsp honey
  • 2 tsp Dijon mustard
  • 1/4 tsp salt
  • 1 Tbsp poppy seeds

Salad Ingredients

  • 1 lb grilled chicken
  • 9 oz baby spinach
  • 2 medium avocados (diced)
  • 1 cup feta cheese
  • 3/4 cup toasted sliced almonds
  • 3/4 cup dried cranberries

Directions:

  1. For the dressing, add all the ingredients (except the poppy seeds) to a blender and pulse until well combined. Pour into a container and stir in poppy seeds. Refrigerate until ready for use.
  2. For the salad, toss all ingredients in a large bowl and evenly coat with dressing. Serve immediately.
