Chili Lime Watermelon Salad

As the temperature heats up, there is nothing more satisfying than a sweet, ripe watermelon. This salad is packed with flavor and only takes minutes to prepare. Enjoy it for a barbecue, as a side at dinner, or as a poolside snack!

Prep time: 10 minutes || 5 large servings

WHAT YOU NEED:

  • 5 cups watermelon in bite-sized cubes (700g)
  • 1 1/2 cups blueberries (200g)
  • 1/2 cup crumbled feta cheese (60g)
  • 1 tsp honey (10g)
  • Juice from 2 limes
  • Finely chopped mint leaves
  • Trader Joe’s Chili Lime seasoning (sub with Tajin seasoning or chili powder and salt)

WHAT TO DO:

Place watermelon cubes and blueberries in a large bowl. Stir in honey, lime juice, and chopped mint. Season mixture with Chili Lime seasoning to taste. Once fruit is evenly coated, gently fold in crumbled feta. Garnish with extra chopped mint.
