This delicious sheet pan meal can be made with just a few simple ingredients and minimal kitchen supplies. Mix it up with winter squashes from your local farmers market like kabocha, delicata, or butternut!

WHAT YOU NEED:

  • 1 lb Acorn squash, cubed
  • 1 lb Brussel sprouts, thinly sliced
  • 1 Gala apple, cubed
  • 4 Chicken sausages, sliced
  • ¼ cup Feta cheese

DRESSING:

  • 3 Tbsps Maple syrup
  • 3 Tbsps Apple cider vinegar
  • 1 Tbsp Olive oil

WHAT TO DO:

  1. Preheat oven to 400℉
  2. In a small bowl, whisk together maple syrup, apple cider vinegar, and olive oil.
  3. Toss chopped squash, Brussel sprouts, apples, and sausage in dressing until fully coated. Evenly spread out over a baking sheet.
  4. Cook for 20–25 minutes until squash is tender. Top with feta cheese and toss.
