Ingredients:

1 bag Success Pearl Couscous

1 tablespoon butter

1 small onion, diced

2 carrots, sliced

2 celery stalks, sliced

2 cloves garlic, minced

4 cups chicken broth

1/2 teaspoon Italian

1 teaspoon salt

1 teaspoon pepper

3 cups cooked, shredded chicken

1 cup milk
-
1 tablespoon parsley, chopped
- 1 tablespoon heavy cream (optional)
Directions:

Prepare pearl couscous according to package directions.

In a large pot, heat butter over medium heat. Add onion, carrots, and celery. Cook 5 minutes until softened.

Stir in garlic and cook 1 minute.

Slowly stir in chicken broth, then add Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat to simmer for 10 minutes.

Stir in chicken, milk, and pearl couscous. Simmer 5 minutes until hot.

Garnish with parsley.

For creamier soup, stir in heavy cream just before serving.
