Ingredients:

  • 1 bag Success Pearl Couscous

  • 1 tablespoon butter

  • 1 small onion, diced

  • 2 carrots, sliced

  • 2 celery stalks, sliced

  • 2 cloves garlic, minced

  • 4 cups chicken broth

  • 1/2 teaspoon Italian

  • 1 teaspoon salt

  • 1 teaspoon pepper

  • 3 cups cooked, shredded chicken

  • 1 cup milk

  • 1 tablespoon parsley, chopped

  • 1 tablespoon heavy cream (optional)

Directions:

  1. Prepare pearl couscous according to package directions.

  2. In a large pot, heat butter over medium heat. Add onion, carrots, and celery. Cook 5 minutes until softened.

  3. Stir in garlic and cook 1 minute.

  4. Slowly stir in chicken broth, then add Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat to simmer for 10 minutes.

  5. Stir in chicken, milk, and pearl couscous. Simmer 5 minutes until hot.

  6. Garnish with parsley.

  7. For creamier soup, stir in heavy cream just before serving.
