Swap traditional creamy green beans with this flavorful recipe that’s full of color. Even better, it’s vegan and plant-based.


Prep Time: 1 hour 30 minutes | Makes 6 Servings

Ingredients:

  • 2 lbs green beans
  • 1 yellow onion, diced
  • 1/4-3/4 cup olive oil
  • 4 garlic cloves, minced
  • 1 cup tomato sauce
  • 1/4 cup celery, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 Tbsp fresh dill, chopped
  • 1 1/4 cup water
  • Salt and pepper to taste

Directions:

In a large pot over medium heat, sauté onions and garlic in oil. Add tomato sauce, salt, and pepper. Simmer for 15 minutes, while stirring occasionally. Add string beans, celery, parsley, dill, and water. Turn heat to low, cover, and simmer for 1 hour and 30 minutes, or until tender.
