Prep Time: 20 minutes | Makes 2 Servings

Ingredients:

  • 1/2 cup quinoa, measured uncooked
  • 1/4 cup cherry tomatoes, diced
  • 1/4 cup cucumber, diced
  • Sunflower seeds, for garnish
  • Goat cheese, for garnish
  • 1/2 cup spinach, chopped
  • Olive oil, drizzled to your liking
  • Balsamic vinegar, drizzled to your liking
  • Salt, to taste
  • Pepper, to taste

Directions:

Prepare the quinoa according to the package instructions.

In a bowl, add chopped spinach as your base and top with cooked quinoa. Top with goat cheese and toss to combine. The warm quinoa should melt the cheese a bit, and mixing it will give you a little taste of goat cheese with every bite!

Add your toppings! (diced tomatoes, diced cucumbers, and sunflower seeds) Drizzle with olive oil and balsamic vinegar. Season with salt and pepper.
