A perfect appetizer for your upcoming holiday festivities! The crunchy crostini, whipped ricotta, and toppings make the perfect bite.

Ingredients:
- 1 baguette
- 1-2 tablespoons olive oil
- 1 cup ricotta
- 1/4 cup fresh chives, chopped
- 1/4 cup dried cranberries
- 1/4 cup pecans, finely chopped
- 2 tablespoons honey
- salt and pepper to taste
Directions:
Preheat oven to 400 degrees. Slice the baguette into 1/4″ slices. Lay slices flat on a baking sheet and brush with 1-2 tablespoons of olive oil. Toast in the oven for 5-7 minutes, until golden brown.
To make the whipped ricotta, add ricotta and fresh chives to a food processor or blender. Add a pinch of salt and a pinch of pepper. Let it blend for 1-2 minutes until smooth.
Transfer the ricotta mixture to a piping bag or Ziploc bag. If using a Ziploc, cut a small piece of one of the bottom corners for a makeshift piping bag.
Once the bread has cooled, pipe the whipped ricotta onto each piece. Top with a few dried cranberries, chopped pecans, a drizzle of honey, and extra chopped chives (optional). Enjoy!
