This casserole is great for meal prep. It’s simple, light, easy to make, and different from the typical cheesy, creamy casserole. Add this to your weekly recipe rotation – you won’t regret it! 

Prep Time: 15 minutes | Cook Time: 1 hour | Makes: 4-6 Servings 

Ingredients: 

  • 3 chicken breasts 
  • 1 cup white Rice 
  • 2 cups chicken broth 
  • 1/2 white onion, chopped 
  • 1/4 cup green onions for garnish 
  • 1/2 cup carrots, chopped 
  • 2 tablespoons butter, melted 
  • 1/2 cup celery, chopped 
  • 2 teaspoons celery salt 
  • 1 teaspoon Greek seasoning 
  • 1 teaspoon salt, pepper, and garlic 
  • 2 teaspoons paprika 

Directions: 

In a 9×13 casserole dish, coat the bottom in melted butter. Add rice, chicken broth, chopped onion, celery, and carrots. Add in celery salt, Greek seasoning, and SPG. Season chicken with SPG and paprika. Place chicken directly in the mixture and cover with foil. Bake at 375F for 50 min. Take the foil off and bake for an additional 5-7 min.
