Prep Time: 40 minutes | Makes 4–6 Servings

Ingredients:

  • 24 oz baby potatoes
  • 1/4 cup olive oil
  • 1 Tbsp fresh minced dill
  • 2 garlic cloves, minced
  • Salt, to taste
  • Pepper, to taste

Directions:

Preheat oven to 400 degrees. Bring a large pot of water to a boil and add the potatoes. Boil for 15 minutes or until you can poke a fork through them. Drain the potatoes and lay them on a baking sheet. Take the bottom of a cup to smash each potato.

In a small bowl, combine olive oil, garlic, dill, salt, and pepper. Brush the mixture on each potato. Place in the oven and bake for 20 minutes, flipping/tossing halfway through. Remove
from the oven and top with fresh dill.
