Prep Time: 45 minutes. Makes 4-6 Servings
- 1 pound boneless skinless chicken thighs
- 1 bell pepper, diced
- 1½ cups corn
- 2 cups baby potatoes, diced
- olive oil
- 4-5 tablespoons taco seasoning
- salt & pepper, to taste
- cilantro, for garnish
Preheat the oven to 375 degrees.
Place the chicken thighs, corn, potatoes, and bell peppers on the baking sheet.
Drizzle with olive oil and season with salt, pepper, and taco seasoning. Place in the oven to bake for 35 minutes.
Serve warm with fresh cilantro.
