Prep Time: 25 minutes | Makes 4-6 Servings
Ingredients:
- 4 cups arugula
- 2 cups boiled tortellini
- 2 tablespoons basil pesto
- 1 cup sliced cherry tomatoes
- 1 cup mozzarella pearls
- 1/3 cup olive oil
- 1/4 cup balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/2 teaspoon oregano
- 1 garlic clove, minced
Directions:
Prepare the dressing. In a small bowl, combine 1/3 cup olive oil, 1/4 cup balsamic vinegar, 1 tablespoon honey, 1 teaspoon salt, 1 teaspoon pepper, 1/2 teaspoon oregano, and 1 minced garlic clove. Whisk to combine and set aside.
Prepare the salad. In a large bowl, add arugula, tortellini, tomatoes, and mozzarella. Drizzle the dressing and add 2 tablespoons of pesto. Toss to combine.
Serve chilled and enjoy!
