- 2 cups lettuce, chopped
- 2 cups spinach, chopped
- 1 avocado, diced
- 2-4 radishes, thinly sliced
- 1 can chickpeas, washed and drained
- 1 cucumber, thinly sliced
- 2 tablespoons olive oil
- Juice of half a lemon
- Salt and Pepper to taste
Add lettuce, spinach, avocado, radishes, chickpeas, and cucumber in a bowl. Toss together. Mix the olive oil, lemon juice, salt, and pepper in a small bowl to form the dressing. Add the dressing to the salad mixture and enjoy!
