Greek Chicken Ingredients:
- 1 pound boneless skinless chicken thighs
- 1 tablespoon avocado oil
- salt, to taste
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon dried oregano
- 1/4 teaspoon dried thyme
- 1 teaspoon garlic powder
Tzatziki Sauce Ingredients:
- 1 cup Greek yogurt
- 2 Persian cucumbers, diced 2 garlic cloves, minced
- 2 tablespoons fresh dill, chopped 1/2 lemon, juiced
- 1/2 teaspoon dried oregano
- salt, to taste
- pepper, to taste
Additional Ingredients:
- cherry tomatoes
- diced bibb lettuce or spinach
- feta cheese
- fresh dill
- naan bread or pita bread
Directions:
Prepare the Greek seasoning. In a small bowl, combine salt, pepper, 1/2 teaspoon dried rosemary, 1/2 teaspoon dried oregano, 1/4 teaspoon dried thyme, and 1 teaspoon garlic powder.
Prepare the chicken. Lay the chicken flat and beat it with a meat mallet to make the chicken even and thin. Drizzle avocado oil on each side of the chicken and season with your Greek seasoning mixture.
In a large skillet over medium-high heat, drizzle avocado oil and sear the chicken on each side for 4-5 minutes or until the chicken is golden brown and crispy. The internal temperature of the chicken should be 165 degrees. Prepare the tzatziki sauce. In a bowl, combine 1 cup Greek yogurt, diced cucumber, dill, garlic, lemon juice, 1/2 teaspoon oregano, salt, and pepper. stir to combine.
Build your gyro! Lay a piece of naan bread or pita flat. Add tzatziki sauce, sliced chicken, lettuce, feta, cherry tomatoes, and dill.
