Prep Time: 20 minutes | Makes 6 Servings 


  • 4 cups cooked chicken, rotisserie works well 
  • 1/2 cup plain greek yogurt 
  • 1/4 cup mayo 
  • 1/3 cup chopped celery 
  • 1/4 cup chopped green onion 
  • 1/3 cup chopped dill 
  • Juice of one lemon 
  • 2 teaspoons garlic powder 
  • 1/4 cup pistachios 
  • Kosher salt, to taste 
  • Pepper, to taste 


Add cooked chicken, greek yogurt, mayo, celery, green onion, dill, lemon juice, garlic powder, pistachios, salt, and pepper to a large bowl. Use a hand mixer to combine (this shreds the chicken to the perfect consistency). 

Serve cool and enjoy on a salad or sandwich!
