This delicious sheet pan meal can be made with just a few simple ingredients and minimal kitchen supplies. Mix it up with winter squashes from your local farmers market like kabocha, delicata, or butternut!
WHAT YOU NEED:
- 1 lb Acorn squash, cubed
- 1 lb Brussel sprouts, thinly sliced
- 1 Gala apple, cubed
- 4 Chicken sausages, sliced
- ¼ cup Feta cheese
DRESSING:
- 3 Tbsps Maple syrup
- 3 Tbsps Apple cider vinegar
- 1 Tbsp Olive oil
WHAT TO DO:
- Preheat oven to 400℉
- In a small bowl, whisk together maple syrup, apple cider vinegar, and olive oil.
- Toss chopped squash, Brussel sprouts, apples, and sausage in dressing until fully coated. Evenly spread out over a baking sheet.
- Cook for 20–25 minutes until squash is tender. Top with feta cheese and toss.
